The Crémant du Jura appellation area is superimposed on the Côtes du Jura, Arbois, Château-Chalon and Etoile terraces.
The varieties authorized for its production are Poussard, Pinot Noir, Trousseau, Chardonnay and Savagnin.
For the white Jura cremant, produced in more than 90% of the farms, the chardonnay must represent at least 50% of the cuvée. For the creamy rosé Jura, the pulse and the pinot noir should also represent at least 50% of the vintage.
The grapes, necessarily harvested by hand, are transported in pierced crates, and pressed in whole bunches."
