Comté cheeses are refined in the traditional way, that is to say by refining in the cellar, with sea salt giving it an incomparable taste with rubbing by hand.
The whole process is manual, without machine intervention.
Extra-old Comté cheese: matured for more than 18 months.
 
Extra-mild Comté cheese : aged 4 to 6 months.
Extra-delicious Comté cheese : aged for 8 to 12 months.
Le patriarch county cheese : aged for more than 12 months.
Extra-old Comté : matured for more than 18 months.

Entreprise l'Alpage, a Jura refiner that lasts !
 
L'Alpage founded in 1958, initially a Dijon creamery which quickly became a Comté cheese ripening house. It has been run for twenty-four years by Pascal Monneret, the founders' son.
 
A few figures to give you !
 
L'Alpage sells around 600 tonnes of Comté per year. This company collaborates with four fruit producers. Some strong points of this company : an unequaled know-how in the process of aging counties. Hence a regularity in the taste level of the cheeses.
