These abbreviations T45, T55, T80 mean what ?
 
The letter T is an abbreviation for "type", this letter T indicates the mineral content (for 100 grs of dry matter).
 
Example : a T55 flour contains 0.55 grams of minerals per 100 grams. The classification goes from T45 the whitest to T150 the most complete.
 
Why choose organic flour !
 
We find the importance of an organic flour especially for the semi-complete or complete flours which keep the envelope of the wheat. Cereals are subject to greater use of pesticides in conventional agriculture.
 
The health benefits of wholemeal flour
 
Did you know that wholemeal flours provide more nutrients because the envelope surrounding the wheat is kept. T150 flours contain three times more minerals such as iron, potassium, magnesium. They also contain five times more fiber than a T45 and more B vitamins. It also has a lower glycemic index.
 
What flour for your bread machine ?
 
To make bread, brioche and pastries, it is best to use gluten-rich wheat flour for the swelling effect. We recommend T55 flour for French bread.
 
Know that the higher the type, the more complete the bread will be. The ideal is to assemble different flours (wheat flour T80 + rye, barley or oat flour), also add oilseeds such as flax.
 
Which flour for your pastries, pastry and pancakes ?
 
T55 or T45 wheat flours are generally used in baking, which rise well. T55 flour is easy to use everywhere : choux pastry, pie dough. For preparations of the financial type, one can choose the T45.
 
Regarding crepes, pancakes, waffles, we recommend a fluid flour that does not form lumps. Finally, you can use a more complete flour such as T80 for cakes, cookies, etc.
